From Green to Gold

With geometric precision, workers spread leaves on the tile floor of the fermenting room at a tea factory in the northeastern Indian state of Assam. In the cool, humid room the leaves ferment, developing complex flavors and changing colorfrom bright green to deep amber and dark brown. A million people make their living in India's tea industry; exports alone are worth about a half-billion dollars annually.
