Rare Delicacy
Photograph by Peter Essick
Rubber-clad fishermen haul crabs from the frigid Beagle Channel in the southernmost reaches of Patagonia. Keeping only the adult males, they'll bait the trap again and return it to the seaa sequence they repeat about 450 times on a normal three-day cruise. The live crabs ride in the hold to Ushuaia, Argentina, where a processing plant turns out frozen crabmeat for shipment to the U.S., Europe, and Japan. Only one crabbing company works these waters in Argentina. Several others lay their traps in Chile's glacier-fed fjords to the west.
