Seed potatoes stream into a cavernous "cellar" for winter hibernation at Penfold Farms. The conveyor shakes off dirt before a worker removes rotten spuds and rocks by hand. "It's not a banker's job. It's five to dark and a couple of hours after," says potato farmer Paris Penfold. "But it's in the blood, and we love to do it."
